Career

Johnny Hernandez, Celebrated Chef and Spokesperson for the National Pork Board opened the doors to True Flavors Culinary Planners in 1994. A native of San Antonio, Chef Hernandez has developed a distinctive culinary style that pays homage to his hometown yet is reflective of the diversity of his travels around the world. As a member of both the Hispanic Chamber of Commerce and the Greater Chamber of Commerce, Chef Hernandez has maintained a connection with the local business community even as his business ventures grow to a national level.

Chef Hernandez was inspired by his father, Johnny Hernandez Sr. who was also a chef. It was in his father’s kitchen that Chef Hernandez learned the business and nurtured his dream from the tender age of five. After graduating from the prestigious Culinary Institute of America in Hyde Park, New York, he was recruited by the Mirage Hotel & Casino in Las Vegas Nevada to be on the original opening team of chefs. As Banquet Chef of the largest hotel in the world, he was responsible for the largest most exclusive events in the country. Courted by an executive search firm, Chef Hernandez moved on to the Four Seasons Biltmore in Santa Barbara California; one of the top resorts in the world. As Chef of La Marina Gourmet Room and The Patio Cafe on Butterfly Beach, Chef Hernandez refined his culinary skills creating menus for the most discriminating palates in the country.

His entrepreneurial spirit and love for San Antonio were driving forces in his decision to return to Texas and open True Flavors Culinary Planners. He has involved his entire family in this venture and continues to maintain a strong connection to his Westside community by locating his kitchen in the heart of the neighborhood where he was raised. In addition Chef Hernandez is involved as a board member with the Mexican American Unity Council and La Escuela de Las Americas, helping to bring economic development and educational opportunities to the Westside.

His impressive accomplishments include being a consultant to many civic organizations, and being awarded a food service contract to cater at the Henry B. Gonzalez Convention Center. Recently True Flavors was selected as Caterer of the Year by the National Association of Catering Executives. Johnny is a mentor, an upcoming leader, and an excellent example of someone who follows his true passion. The “ingredients” to his continued success include his commitment to his family, church, community, and his business. His professional recognition on a national level, combined with his commitment to the Westside neighborhoods where he was raised and maintains his business, allows Chef Hernandez to move forward, steadily growing his businesses while keeping grounded in the values and cultural heritage that shaped his past.
